From Sap to Syrup

Teresa Liu, explains to Celia Klin, professor and senior associate dean of Harpur College, how to use a refractometer to determine when sap turns to syrup. The two attended syrup boiling event was part of two classes: ENVI 382B – Sweet Harvest: Bees and Maples, taught by Sara Velardi, lecturer in environmental studies; and ENVI 381T – Plants and People, taught by Joshua DeMarree, greenhouse assistant.
